Specialty Honeys

Our specialty honeys are rare and sometimes only are available every second or third season.  Delight in some of the most delicious honeys available; especially our certified organic clover honey, collected from the remote alpine regions in the Canterbury region of the South Island.

New to our product range is our RAW HONEY.  Collected from our beehives and completely hand-processed from hive to the jar - temperature no more than 36oC and only lightly filtered - this honey is very popular with our store customers.  It tastes light, sweet, floral - delicious!

Our Honey Dew was collected from the native beech trees found on Mount Grey, near Rangiora, North Canterbury.  The honey bee collects the nectar from the residues left from sap-sucking insects; so it hasn't come from the nectar from plants.  The honey bee creates the most interesting, somewhat complex-flavoured honey that is reminiscent of a red stout beer; fruity malty.  This honey won't crystalise so it's handy in the kitchen.  Use instead of brown sugar.  Enjoy on unsweetened, low-fat yoghurt - it tastes really good!  Honey dew is also known to have high anti-bacterial and anti-oxidant properties.

Thyme honey is also another healthy honey; and it is an extremely strong flavoured honey.  The thyme herb has always been used to treat colds, and our thyme honey is a great way to treat a sore throat.  It is only collected from the wild thyme found near Alexandra, Central Otago, South Island.

The varroa bee mite was discovered in the South Island in 2008 and is now found in beehives throughout the island.  Unfortunately, it is very difficult to manage a beehive with varroa organically.  It is very intensive for the beekeeper and with no guarantees the hive will survive.  Last season saw a spike in varroa which resulted in a very poor organic clover honey crop for our beekeeper, and he has decided to no longer continue.  After speaking with another organic beekeeper, he also cannot guarantee supply next year. 

With Certified Organic Clover Honey, you are guaranteed that there are no chemical residues in the honey.  Clover honey tends to come from the clover found on farms where the land is used intensively.  Our Certified Organic Clover honey is collected from the clover found on the foothills of the Southern Alps.  The flavour is quite unique and exquisite; and certainly cannot be compared with other clover honey, especially North Island clover honey.
